The key to making Nkauj Iab’s cilantro dish — a handy dandy mortar and pestle. And the steps to the dish itself, in the words of the spotlighted lady herself:
Smash a clove of garlic with the peppers and a pinch of salt
Throw in 1-2 chopped green onions
Smash it (but not too much smashing or it’ll become bitter)
Throw in the bunch of chopped cilantro
Smash it up (but not too much smashing)
Squeeze in a whole lime
Squeeze in some fish sauce
Stir it up for mixing
Taste it and fix it to your liking
After I taste it, I let it sit for 5 minutes and taste it again to make sure it’s on point
