The key to making Nkauj Iab’s cilantro dish — a handy dandy mortar and pestle. And the steps to the dish itself, in the words of the spotlighted lady herself:
- Smash a clove of garlic with the peppers and a pinch of salt
- Throw in 1-2 chopped green onions
- Smash it (but not too much smashing or it’ll become bitter)
- Throw in the bunch of chopped cilantro
- Smash it up (but not too much smashing)
- Squeeze in a whole lime
- Squeeze in some fish sauce
- Stir it up for mixing
- Taste it and fix it to your liking
- After I taste it, I let it sit for 5 minutes and taste it again to make sure it’s on point
