Al Pastor Taco | Jilberto’s | San Diego, California
Every California resident has their taco shop of choice. Maybe this was just my neighborhood, but each high school had its resident taco shop. Technically I was suppose to proudly represent Alberto’s, but I just couldn’t. I was a loud and proud traitor and boasted Jilberto’s, my rival high school’s resident taco shop. And I still boast Jilberto’s as the best Mexican joint I have come across despite living in various parts of California.
My love for Jilberto’s goes beyond the requisite bias all kids have towards their neighborhood joint — I really believe this joint has the best variety of seasoned meat! Its so rare to find a taco shop where the quality of meat remains consistent whether you’re ordering a carne asada, carnitas or al pastor dish. As my boy Carlo puts it, “They dont have just one dish thats the shit, Jilberto’s has several dishes that satisfy your 3am drunken hours and more importantly, tastes just as good sober.” One such prime dish is the Al Pastor taco (yes that is singular as in one taco seen above) — marinated with a variety of spices, perfect amount of heat from grounded chiles, and absolutely delish with a hint of lime.
